Wild Onion Pie

    1/4 cup butter, divided
    1/2 cup crushed soda crackers
    8 cups sliced sweet onions
    3 cups cooked wild rice
    2 cups shredded Swiss cheese, divided
    1 1/2 cups milk
    2 large eggs, well beaten
    2 heaping tsp dried Greek seasoning
    1 tsp dried, crumbled rosemary
    fresh rosemary, garnish

Preheat oven to 350°F. Melt 2 tbsp butter; combine with crackers. Press into buttered 8x8-inch pan; set aside. In large skillet, sauté onion in remaining butter 15 minutes or until light golden brown; set aside. Layer crust with wild rice, 1 cup cheese, onions and remaining cheese. In small saucepan, scald milk and cool; add eggs and seasonings. Pour over cheese; bake 30-40 minutes, until golden brown. Cut into squares; garnish with rosemary.
