Wild Rice Sauté Sidedish

    2 tbsp diced yellow onion
    2 tbsp whole butter
    1 tbsp diced sweet red pepper
    1 tbsp diced green pepper
    1/2 cup sweet corn
    6 snow peas, sliced
    1 tbsp dried cranberries
    1 tbsp dried blueberries
    1 cup cooked wild rice
    2 tbsp pepitas, toasted
    salt and ground black pepper, to taste
    1 tbsp water
    2 tbsp sliced scallions

In a large pan over medium-high heat, sauté onion in butter. Increase heat to high; add peppers and corn, tossing together for 1 minute. Add peas; toss well. Add dried berries and wild rice; toss well. Add pepitas, salt and pepper; toss well. Add water; toss well. Stir in the scallions and serve.
