Wild Rice Almond Sauté

    YIELD: 24 portions
    PORTION: 1/2 cup

    48 oz chicken broth
    48 oz dry white wine
    1 1/2 lbs uncooked wild rice
    6-8 oz butter or margarine
    1 lb slivered almonds, toasted

In steam-jacketed kettle or large kettle, bring broth and wine to a boil; add wild rice. Cover, simmer 30-65 minutes or until desired doneness. Drain if necessary.

In large skillet, melt butter. Sauté wild rice 3-4 minutes; stir in almonds.
