Sue's Wild Rice Stuffing

    1 lb pork sausage
    1 small onion, chopped
    1 cup chopped celery
    1/2 cup butter
    6 cups cooked wild rice
    1 pkg (14 oz) sage & onion stuffing mix
    2 cups chicken broth
    2 cans (4 oz ea) sliced mushrooms, drained
    2 tsp poultry seasoning
    1 tsp garlic powder
    1 cup raisins

Preheat oven to 350°F. In medium skillet, brown sausage, drain; set aside. In small skillet, saute onion and celery in butter until tender. In large bowl, combine all ingredients; mix thoroughly. Place in 2-qt casserole. Cover; bake 1 hour. 10-12 servings.

Willie and his wife, Sue, farm the original land his grandparents homesteaded in the Kelliher/Waskish area. The Lindquist family first got involved in growing wild rice when Willie’s father, William, Sr., leased 40 acres and contracted with Uncle Ben’s in 1968. Willie worked with his father on the wild rice and beef farm throughout high school. After graduation, he attended technical school for auto body repair, which is where he met his future wife Sue, originally from Fosston, MN. After they were married, they moved back to the family farm and built a house where they live today. Willie and Sue have three children: Nicole, Allen, and Donald. Allen is farming with Willie, making him the fourth generation of Linquists farming this land. Together they farm nearly 1,000 acres of wild rice and soybeans.
