Pork Sausage N’ Wild Rice

    1 lb pork sausage
    1 cup diced celery
    1 medium onion, diced
    1 jar pimento, diced
    1½ tsp poultry seasoning
    3 cups cooked wild rice
    1 cup of beef broth or 1 can cream of mushroom soup

Preheat oven to 325°F. In large skillet, sauté sausage, celery, onion, and pimento until cooked through. Drain off excess fat. Combine remaining ingredients, mix well. Place mixture in large baking dish. Cover and bake at 325°F for 1 hour. Stir occasionally while baking. Uncover last half hour to brown slightly. Season to taste.

Nathan’s grandfather Harold, along with Harold’s brother Franklin, were early pioneers in the wild rice industry in Minnesota. They were instrumental in efforts to prevent shattering from the panicles as the wild rice matured. They developed two shatter-resistant varieties of wild rice which provided enhanced yield. They also played a role in many other efforts to promote the growth of the industry in Minnesota, including the creation of a farmer cooperative which later transitioned into the Minnesota Cultivated Wild Rice Council. They continually sought new ways to help Minnesota cultivated wild rice farmers care for the crop and supported other farmers trying to accomplish this same task. Nathan’s grandfather retired from farming in the late 90’s.

Upon completing his degree in Applied Plant Sciences from the University of Minnesota, Nathan worked for CHS where he was responsible for developing the precision agriculture strategy for its cooperatives. Nathan retired from CHS to pursue wild rice farming on a full-time basis in 2017. As he was nearing retirement, Don Richards, owner/president of Chieftain Wild Rice Company, asked Nathan if he would be interested in purchasing his farm. Nathan was humbled by the honor and elected to purchase his 590-acre farm and begin farming on a full-time basis.

In continuing the early pioneering efforts of his grandfather, Nathan re-established Kosbau Brothers Farms as a tribute to his heritage and continues to grow wild rice for Chieftain Wild Rice Company, now owned by Don’s daughter Jill. Nathan also sells to other marketers as well.
